So I gots me a job interview. For a job that I never dreamed I would be in a position to apply for, let alone be offered an interview. I am on cloud 9. Now I don't hold high hopes for actually getting the job, but Ill do my best, and I'm just so excited to be considered. Yay me.
On another note, our start to the year in regards to our healthy eating is going well. Although we did pop out for a sneaky dinner tonight because we have open homes tomorrow and the house is spotless, definitely not wanting to mess it all up!! I made these delicious pikelets the other day as a great snack for the boys and I. Give them a try, on their own or with some sugar free jam. Healthy and delicious, recipe found here:
1 1/2 cups self-raising flour, sifted
2 tablespoons caster sugar
1 egg, lightly beaten
300ml buttermilk
1/2 cup (140g) apple puree
20g butter, melted
1. Combine flour and sugar in a bowl. Make a well in the centre. Whisk egg and buttermilk together in a jug. Add egg mixture to flour mixture. Whisk until smooth. Stir in puree.
2. Heat a large frying pan over medium heat. Brush base with butter. Using tablespoons of batter at a time, cook in batches for 2 to 3 minutes or until small bubbles start to form on the surface of pikelets. Carefully turn over. Cook for 1 to 2 minutes, or until cooked through. Transfer to a wire rack to cool. Store in an airtight container.
